Croquembouche
Croquembouche, or croque en bouche, literally 'crunches in the mouth', was created in the practice of pièce montée, literally “assembled piece”. This is a decorative, sculptural confectionery centerpiece for formal events.. The croquembouche, a type of pièce montée, is a decorated conical spire of caramelized, filled choux, or cream puffs, bound together with caramel.
"The fine arts are five in number," wrote the chef Marie-Antoine Carême, "painting, sculpture, poetry, music, and architecture—whereof the principle branch is confectionery."
Carême, a French pastry chef and early practitioner of haute cuisine who operated a pâtisserie on rue de la Paix in the early 19th century, created pièce montée.
Flavors include, but aren’t limited to Vanilla, Vanilla-rum,Chocolate, Coffee, Caramel, Praline, Grand Marnier, or Cointreau. Minimum 45 pieces. One flavor choice for 45-90 pieces,, two flavors for 90 or more pieces. No pickup before 11 am, and cake cannot sit out for more than 2-3 hours or in humidity. $2.75 per choux. We recommend 3 choux per serving.
