French Mousse Cakes and Croquembouche
We specialize in authentic, rich French mousse cakes
We offer 3 cake flavors:
Satin – Light, white chocolate mousse studded with lightly brandied raspberries and layered with ladyfinger sponge cake.
Fleur de Cocoa- Our signature chocolate lover’s cake. Extra-dark chocolate mousse with chocolate sponge cake lightly soaked with Grand Marnier.
Red & Black – Dark chocolate raspberry mousse with a layer of raspberry coulis and chocolate sponge cake.
Chef Julia will assist with the final design, based on your desires and the parameters of your wedding. The exterior of the cake will be white or dark chocolate glaze, or rolled fondant. The exterior can be colored, but the only true white is fondant. White chocolate glaze is ivory. Chocolate or sugar flowers can be added, or the Chef can do many other special decorations, such as sugar work, piping, etc.
All cakes are custom designed and will be quoted following your first consultation, when we will discuss the desired look, and flavors of your cake. Tiered wedding cake prices are $ 9.00 per person and may vary according to décor, cake flavor, and exterior.
The traditional French wedding cake makes a spectacular centerpiece to a wedding table. Caramelized cream puffs, choux, are filled with your choice of pastry creams and arranged as a cone topiary and elegantly decorated. Prices start at $2.75 per choux with a minimum of 45 pieces. Flavors include, but are not limited to Vanilla-rum, Vanilla, Chocolate, Praline, Grand Marnier, and Caramel.
Petits-Fours and Favors
Our own petits-fours include miniature tartelettes, eclairs, and our Royal cake.

Mixed Berry (seasonal)
We can also create a second cake for the groom or provide desserts as an alternative to wedding cake or for a buffet. Fleur de Cocoa offers in house made chocolates and customized pieces for their guests.
Delivery, Deposits and Samples
Consultation is done on a reservation basis for $15.
For orders of $500 or more delivery is free if location is within a 15 minute drive. Additional pro-rated time is charged at $80 per hour.
As the Chef only does one wedding cake per day, reserve your date with a non-refundable $50 deposit, which is applied towards the order. Balance is due a week before the event. Other deposits may be taken for use of special stands, equipment or displays. Our cakes cannot sit out at room temperature more than 2 hours maximum, much less if set outdoors in warm weather. Often delivery and setup is done during the cocktail hour.
